Mesh vs Wireless LAN

Did you already purchase the APs at this point? If not, I would recommend maybe Meraki Go for home (similar Meraki hardware for lower end enterprise models but, low cost and NO licensing), you can set up multiple APs but yes, you also want to set up APs nearby the more 'dead" zones as then they will blanket the whole area. Run a data cable to each area and install APs.

Meraki Go also can have a network set up and then you can add multiple SSIDs which are then all rebroadcast out of your APs you deploy. I have 3 main SSIDs at home. One for laptops, desktops and TVs etc, one for mobile devices (less bandwidth) and one for guest (lower bandwidth and splashpage with 24hrs lease, you are a guest, not driving by to get free wifi all the time) ......

If you already have Ubiquiti though, yes, same applies, run data cables up to the dead areas...
